Green Sauce - Cilantro
WHY?
It’s an excellent way to pack in as many herbs and other greens as possible.
Herbs are a powerhouse of phytonutrients and have strong antioxidant properties.
Green sauce is a true taste enhancer for stews, soups or roasts.

cilantro
optionally: basil, mint, dill, chervil, parsley

lemon
juice and zest

olive oil

salt

garlic

Instructions
First add the liquids, then the roughly chopped herbs, garlic, salt, and lemon zest to a blender.
Blend until very smooth.
Fill into a glass jar, cover with a thin layer of olive oil to keep it fresh.
Use on hearty savory stews, soups and roasts.
Notes
Best stored in the fridge. Keeps well for a few days.
